Marc Payne – Executive Head Chef
Marc has recently joined the senior team at the hotel and brings with him a wealth of experience. Marc states that the turning point of his career was securing a position working for Gary Rhodes at the Rhodes & Co, Manchester and from there his career bloomed, working his way through the ranks in different positions until he took the reins at the ‘Ranalph Restaurant’ at Crewe Hall. It is no wonder that Gary Rhodes is one of the biggest influences in Marc’s career along with Marco Pierre White & Keith Floyd. Quality and consistency is the key to Marc’s 22 years in the kitchen, and that coupled with his passion for good quality fresh food we are delighted to have him on board.
Food & Drink Manager – Valentin Popescu
Valentin joined the Aztec Hotel & Spa, part of the Thwaites family in August 2017, as Food and Drink Manager, with a pedigree in hotels having worked in the industry for over 30 years, in Romania, Cyprus, Greece and some exceptional properties in the UK. When not in work, Valentin enjoys eating great food and trying new wines, along with his wife & two sons.
Food & Drink Team Leader – Rhys Withenshaw –
Rhys has worked at the Aztec Hotel & Spa, part of the Thwaites family from the age of 16, starting out part time he’s developed his skills, knowledge and ability and is a pivotal member of the food and drink team, now heading up the Bars here at the hotel, working closely with Max in the restaurant to deliver a great experience for our guests. Another keen runner in the ranks too, with Rhys having completed 5k, 10k and half marathons over the last few years and also has a real passion for football, Bristol City being his favourite team.
