Pete Williams – Executive Head Chef
Pete joined the company back in 1995 as Head Chef of then the company’s five-star hotel, The Stafford. Pete then had the opportunity in moving down to the sunny South and has been our Head Chef since 1998. Having over 40 years of experience in the industry, Pete is a key member of our Food and Beverage operation and portrays his values in his menus. Pete in his own words looks “to serve quality, locally sourced produce which shows value for money”.
Tom Hopkins –Restaurant and Bar Manager
Tom joined us back in 2008 as a part time food and drink assistant at one of our sister properties, Kettering Park Hotel. Shortly, realising this was the career path that he wanted to take; Tom was promoted to a Team Leader in 2012. In November 2013, a position became available here at the Restaurant and Bar, Fareham for Assistant Restaurant Manager. Tom took the two-hour journey down South and has been here ever since. Tom was promoted to Restaurant Manager in May 2015. Tom is a key member of our team – and holds our ethos of “Small Details, Big Difference” close to his heart.
Tom Weston-Davies – Deputy Restaurant and Bar Manager
Tom joined the hotel back in 2011, after graduating from South Downs College onto our General Assistant Programme. In 2014, Tom managed our Events Team, whilst completing the Food and Drink Academy, and then took the position as Assistant Manager – FOH. Aftetr a successful eighteen months in this role, learning and developing, Tom moved over to the Food and Drink team to help and assist Tom in providing an exceptional experience for our guests.
Joe Davidovitz – Assistant Restaurant and Bar Manager
Joe is relatively new to the ‘Thwaites’ family and joined us from Holiday Inn early in 2016. Providing strength to our Food and Drink teams, Joe is a welcome addition and really has brought into our company core values!
Sabrina Marchant – Day Bar Supervisor
Sabrina has been with the company just over 14 years. She has seen so many changes over the years and provides that experience and professionalism extremely well. Having always worked in our Food and Beverage department, she is a popular employee here at the Restaurant and Bar. Sabrina works during the day and has the responsibility of overseeing the Bar and its service.
Monika Belbin – Day Bar Supervisor
Monika has been with the company just over 10 years. Just as Sabrina, she has seen so many changes over the years, and provides that experience and professionalism extremely well. Having always worked in our Food and Beverage department, she is a popular employee here at the Restaurant and Bar. Monika can be seen working during the day and night and has the responsibility, with Monika of overseeing the Bar and its service.
Nicola Armstrong – Restaurant Team Leader
Nicola has worked at the Restaurant and Bar since 2008. Initially working one day a week due to family commitments, she was a solid and reliable employee that thrives in customer satisfaction. As the kids grew older, this enabled Nicola to devote more time to the Restaurant and Bar and in July 2015, saw her gain a promotion to Restaurant Supervisor, a promotion thoroughly deserved. Along with Heather, she provides additional support to the Restaurant Management Team.
